Founder
Ignacio Blanco
Ibiza was founded by renowned restaurateur Ignacio Blanco, a pioneer in
bringing modern Spanish cuisine to American diners. Ibiza Kitchen is the
latest chapter in a passionate journey that began back in 1984. Although the
door to his groundbreaking restaurant Meigas in TriBeCa closed in the wake of
9/11, Ignacio’s vision lived through. Then, it found its perfect home in
Chappaqua, NY.
Chef-Partner
David Martinez
Rising star and chef-partner David Martinez, born in the U.S., is quite deeply
connected to Spanish culinary roots. He has refined his craft both in top-tier
NYC Michelin kitchens and during immersive culinary travels through Europe.
Together, with over 50 years of combined experience, Ignacio and David have
crafted a menu that balances bold flavors, refined techniques, and heartfelt
storytelling on every plate.
